Homegrown Rhubarb and White Asparagus Now In


The freshest homegrown rhubarb and white asparagus is now available at the Belleville Country Store.


Though a vegetable stalk, rhubarb is treated more like a fruit, and is typically used in desserts, such as pies. Rhubarb is very tart, so it is best to pair with sweet fruits, especially strawberries.


White asparagus, with its more more delicate flavor and tender texture, is grown underground to inhibit its development of chlorophyll, creating its distinctive white color. Green and white asparagus are interchangeable in recipes; however, white asparagus needs to be peeled, and needs to cook 10-15 minutes longer than the traditional green asparagus.

Thank You for the Warmth of Your Concern

The unseasonable weather has taken quite a toll on local crops. While Eckert's has suffered extensive damage, the Eckert Family is happy to report that their homegrown strawberry, peach, blackberry, and apple crops will be available for purchase in the Belleville Country Store, as scheduled.

"A lot of farmers have endured quite a loss over the last week," said Chris Eckert. "Although its been difficult, our family is extremely thankful to everyone who has supported us with their their thoughs and prayers. We appreciate everyone's concerns, and are now just looking forward to the warmer weather!"
