Apple Season is drawing to an end at our farms, but we will still have plenty of our homegrown apples for sale in our Belleville Country Store even after pick-your-own ends. Our new cookbook offers so many delicious recipes, it's hard to choose which one to make next. As I was browsing through the cookbook, I came across the Apple Goodie recipe and decided to go with it - all because of the story. When Chris & Angie Eckert lived on the East Coast, years ago, they visited another family-owned apple farm - those owners gave the Eckert's their favorite apple recipe - you guessed it...Apple Goodie. Now it's an Eckert Family Favorite too!
Apple Goodie with Oatmeal & Brown Sugar Topping
Goodie Ingredients:
5 cups apples, pared & sliced
3/4 cup sugar
1/2 tsp. ground cinnamon
Topping Ingredients:
3/4 cup oatmeal
3/4 cup packed brown sugar
3/4 cup flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/2 cup butter or margarine
To Prepare Goodie: Arrange apples in a 9-inch square baking pan. In a small bowl, mix sugar and cinnamon together; sprinkle over apples and mix well. Spoon oatmeal and brown sugar topping over apples and pat firmly. Bake at 400 degrees F for 30 to 40 minutes until a crust is formed. Serve hot or cold. Serve with Eckert's homemade custard.
To Prepare Topping: In a mixing bowl, combine oatmeal, brown sugar, flour, baking powder, baking soda, and salt; cut in butter and work with fingertips until mixture is crumbly.
