What
a great time we had last night in the cooking classroom! Lana (our culinary
educator), Lynn (one of our wine stewards) and I hosted 22 people in the
classroom for our first class on sangria and mixed drinks with wine. We found
some delicious recipes online and tried them in our own cooking classroom and
paired each drink with an appetizer. The favorite of the whole bunch was the
Peach-N-Cream Smoothie. It was the last drink featured and we served it with
Eckert’s Peach-N-Cream Cake. Appropriate huh?
What
makes this drink so delicious? Eckert’s tree-ripened sliced peaches of course!
We sliced them and laid them flat on a sheet pan in the freezer for about 2
hours before making the smoothies. Pure local honey adds a little extra
sweetness to this refreshing drink. You can modify the flavors to your taste.
We followed the recipe to a “T” using a dry Riesling wine. We served every last
drop to our guests so I am sorry to report that I do not have a photo of the
finished product!
1 cup cold Riesling
2 Tbs orange liqueur (ex: Grand Marnier)
2 Tbs peach liqueur (ex: Peach Schnapps)
1 Tbs fresh squeezed orange juice
1 Tbs fresh squeezed lime juice
1 Tbs Eckert’s pure honey
2 cups frozen peaches
Combine ingredients in blender and puree until smooth.
Garnish with a fruit slice.
