Homegrown Rhubarb and White Asparagus Now In


The freshest homegrown rhubarb and white asparagus is now available at the Belleville Country Store.


Though a vegetable stalk, rhubarb is treated more like a fruit, and is typically used in desserts, such as pies. Rhubarb is very tart, so it is best to pair with sweet fruits, especially strawberries.


White asparagus, with its more more delicate flavor and tender texture, is grown underground to inhibit its development of chlorophyll, creating its distinctive white color. Green and white asparagus are interchangeable in recipes; however, white asparagus needs to be peeled, and needs to cook 10-15 minutes longer than the traditional green asparagus.
